Korean pot stickers and veggies (Bibimmandu) with our spin on it!
Not sure what to make for dinner? Had a long day and want to make something tasty but relatively quick? You can find most of these ingredients right at home. This meal is absolutely delicious and you won't have any guilt for eating it afterwards. This recipe can easily feed a couple of people. Also, you can alter this to your own taste, especially when it comes to the spices. Without further or due, let's get right into this.
This recipe that I used called for spinach, carrots, cucumbers, green onions, and red cabbage. If you're not a spinach fan, you can honestly use any other greens or even romaine lettuce like we did in my video, you can click here to check it out. also if you're a fan of white onions or even want to add a sweet pepper to the mix, go right ahead. Cut all of the veggies into thin strips.
I used the following and this is honestly enough for 4 people. The dumplings taste much better with extra veggies, if you want to snap a photo to Instagram, tag me in it so I can see your wonderful masterpiece! But first, let's get back to the recipe. This recipe calls for:
2 whole carrots
4 green onions
1 bunch of spinach (Can use a head of romaine lettuce if you wish or your choice of greens)
6 Persian cucumbers (We personally chose Persian cucumbers because they taste better)
1/3 of a red cabbage (You can slice or shred it, it's probably easier to shred it)
1/2 cup of red pepper paste (You can use a tomato paste if you like)
1/4 cup Seasoned rice vinegar
1 tsp sesame oil
2 tbl sp olive oil
6 cloves of garlic (minced)
1 tsp Sriracha (If you used tomato paste for this recipe)
a pinch of sesame seeds (optional)
4 tbl sp water
1 tsp soy sauce
Directions:
We cut up all of our veggies and plate them the way we want. We do not cook our veggies. We simply plate them. We then take a skillet, preferably non-stick in which case you would only need 1 tbl sp of olive oil. Gently place the pot stickers in the skillet. Make sure to routinely turn over the pot stickers. Do not, and I repeat, do not leave the pot stickers on the skillet and go and do something else. They will burn. To avoid burning your pot stickers, stay by the skillet. Also if it is frozen be very careful, oil and water do not mix so turn your heat on medium and be careful. Once your pot stickers are a nice golden brown I put them on the side to cool down. In another skillet, I put the remaining olive oil in and begin to sautee my minced garlic. Once a gold color, I carefully add the pepper paste (in this instance tomato paste), and then I add a bit of water to dilute it to create the sauce. Go ahead and stir the sauce constantly. You need to have it on medium heat. You will see it begin to simmer. Add in the sesame oil. Also add in the seasoned vinegar. Add in your sriracha if you are looking for that kick. I added in soy sauce because it adds a salty and sweet flavor. Go ahead and add it in if you wish. Make sure this comes to a simmer. After a couple of minutes of that turn off the stove and go ahead add the pot stickers to the veggies. Then drizzle the sauce over both the pot stickers and veggies and leave the rest on the side to add as you eat. The sauce really brings it all together. The final step is to sprinkle sesame seeds, if you wish. All that is left to do is enjoy!
